Cheap and quick dinner for a whole family that you can make out of anything. In this recipe, I used my favorite ingredients that I usually reach for to make that famous polish classic.

Spinach, goat cheese, and sundried tomatoes are just working so well together, layered in between the potatoes, and covered with shredded cheese topped up with a beaten egg. Once it’s baked the egg and cheese give nice crispy top and edges to the whole bake.

Potato bake is something you can make your own. Mushrooms, broccoli, and sausage is also a great and delicious option. You will like this simple recipe, especially when you hit a mid-week lazy day. Filling and easy, you just need some boiled potatoes, and you can get creative. You will make just enough for 4 servings. I absolutely love it to take with me to work as a packed lunch. Comfort at work? Yes, please.

Ingredients
  

  • 4 Large Baking Potatoes
  • 250 g Mushrooms
  • 880 g Fresh Spinach
  • 100 g Goat Cheese
  • 8 Sun-Dried Tomatoes
  • 1 Small Onion
  • 200 g Shredded Mature Cheddar Cheese
  • 3 Large Eggs
  • 3 Large Garlic Cloves
  • Dried Rosemary
  • Ground Nutmeg
  • Salt &Pepper

Instructions
 

  • Peel and slice into 2 cm thick slices potatoes. Boil in a large pot until halfway cooked. Don’t wait until they are too soft.
  • Meanwhile, wash and drain well the fresh spinach. Start cooking the spinach in a deep-frying pan. Once the leaves start to cook, season with salt and pepper. You can also add a pinch of garlic powder. Once ready, drain any excess water and set aside.
  • Wash and cut mushrooms into thin slices. Cook in a pan on medium heat with 1 tbsp of olive oil, a pinch of dried rosemary, and salt and pepper. Set aside.
  • Cut your onion into thin half-moon slices. Peel and slice garlic cloves.
  • Leave the cooked potatoes on the side to cool off a bit before assembling the layers.
  • Preheat the oven to 180C. Prepare your baking dish that has a lid. Start creating layers of your potato bake. First potatoes (season with salt and pepper) following with shredded cheese, spinach, mushrooms, goat cheese, sundried tomatoes, onion, and garlic. If your dish is big probably you will end up with 2 layers.
  • Finish up by pouring over beaten eggs with a dash of nutmeg. Cover the baking dish with a lid and place it in the oven. Bake for 40 to 50 min.
  • Enjoy while hot. Perfect with some ketchup on the side.
