Soft cottage cheese with cucumber and radish is a so-called classic in Poland. We usually make it from early spring until September, but it is also a great breakfast item during autumn and winter months.

What kind of cheese do I choose for this recipe? I get my soft white cheese (cottage/curd cheese), also known as twaróg, in my local Polish deli. They are coming in a white round or triangle packaging in the refrigerator ally. The brands to look out for are Mlekpopl, Łowicz, or Piątnica.

Ingredients
  

  • 250 g Cottage cheese
  • 4-5 Radishes
  • 1/3 Cucumber
  • 1 tbsp Greek Yogurt
  • 1.5 tbsp Mayonnaise
  • 5 Stalks Spring Onion
  • Salt & Pepper

Instructions
 

  • Place cheese in a large bowl and mash it with a fork until loose and there are no large lumps.
  • Chop radish and cucumber into medium size bite pieces and transfer into a bowl with cheese. Cut the spring onion into thin rings and transfer to a bowl.
  • Add mayo and yogurt. Give it a good mix and season with salt and pepper to taste. Enjoy with fresh bread.
