Tart with Pears, Pudding and Hazelnuts

Pears are one of my favourite fruits to eat in any form. Here we will make pear tart with a smooth filling of vanilla pudding topped up with some hazelnuts. All of this on a buttery and crumbly pastry. One big treat that takes no time to prepare.

This easy recipe is something to impress your family and friends. I always viewed tarts as an elegant and delicate dessert that brings this wow factor when served. I guess it’s because of the pastry. We tend to think that it is something so hard to do and we don’t really take the initiative to try and just give it a go. Let me tell you that combining the right amount of butter, sugar and flour is the easiest thing. So don’t worry and don’t overthink it! You can definitely do it!

What do we need? What type of puuding am I talking about? We need a polish sachet of powder vanilla budyń. You can find those in polish delis. I also use a polish sour cream called Śmietana 18% but you can swap it to just normal sour cream. All other ingredients you can easily buy in your local shops.

Ingredients
  

For the Crust

  • 250 g Plain Flour
  • 100 g Butter
  • 100 g Icing Sugar
  • 3 Egg Yolks
  • 1/2 tsp Baking Powder

For the filling

  • 3 Ripe Pears
  • 1 cup Śmietana 18% or sour cream
  • 5 tbsp Sugar
  • 1 sashette Vanilla Budyń
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 1 handfull Hazelnuts
  • Icing Sugar to decorate

Instructions
 

  • To make the pastry cut butter into smaller pieces and combine with the rest of the ingridients for the crust using your hands. You can start in a bowl. Once it starts getting sticky trasfer onto a cleaned and floured counter and continue making the pastry. When all ingridients are well combined use the foil to cover it and place in the fridge for 30 min.
  • Menawhile, wash and peal the pears. Cut into quarters and remove the seeds. Cut each quarter in half again.
  • Next prepare the filling. Mix all of the ingredients together until smooth.
  • Preheat oven to 190C and prepare your tart tin (26cm) by greesing with butter all of the edges and the base of a tin. Roll out your puff pastry and transfer onto a tin. Pierce the base of the pastry few times with a fork. Lay out pears and cover with the pudding mixture. Toss a handful of hazelnuts on top and bake for 30-35 min.
  • Let the tart completly cool down before removing from the tin and dust with icing sugar. Enjoy!
