Pickled Celeriac and Pineapple Salad

Refreshing and with a bit of spice to it, this salad is perfect for snacking or for sapper.

It is a bit unusual and different from what you are probably used to on daily basis, but definitely worth a try, as it is something that people in Poland eat, although it varies in the list of the ingredients almost every time. Different home, different recipes, some don’t even recognize that it’s still indeed the same salad.

If you are unsure how leek can be eatable completely raw and not overpowering, the pineapple and pickled celeriac root is coming to the rescue. The sweetens of those two ingredients really make a difference, mixed with mayo and corn. This way the leek is just a touch of peppery/oniony taste that really works.

I know. Pickled celeriac is again something new. But do not worry! You can definitely find it in your local polish grocery shop or order online. I have found multiple websites that do a very quick delivery of all essential polish produce. The company I usually go to to get this pickled goodness is a polish brand called “Rolnik”, which is easily found even on google search.

Ingredients
  

  • 1 Medium Leek
  • 320 g Pickled Celeriac
  • 200 g Pineapple Chunks
  • 250 g Mature Cheddar Cheese in a block
  • 200 g Ham of your choice in a block
  • 200 g Corn can
  • 1 Medium Tart Apple
  • 3 tbsp Mayonnaise
  • Salt &Pepper

Instructions
 

  • Chop your leek into thin slices. Transfer to a colander and wash properly. Set aside and let it drain well.
  • Meanwhile, chop ham and cheese into small bite-size cubes. Next chop apple and pineapple to the desired cube size. Transfer into a big bowl. Drain celeriac from the water and add it to the bowl. Follow with leeks, mayo, and corn.
  • Give everything a good mix and try for seasoning. Add a pinch of salt and pepper, give a good mix again and let it cool in the fridge for at least 1 hour. The salad will taste much better once it’s cold.
  • Enjoy by itself or with a side of a nice slice of wholegrain bread with butter.
