In a large pot preheat 1 tbsp of olive oil. Clean and place beef chunks into the pot. Brown on each side. Once done, place the beef on the plate and set it aside. Chop all the ingredients for the paste and place them in a food processor. Wizz until smooth.
Place the prepared paste in the same pot with 2 tbsp of water and fry for 2 minutes. Add star anise and peppercorns. Let them fry for a minute. Follow with soya sauce and sugar. Stir well, and add browned beef chunks. Pour in the beef stock (just to cover the beef), bring to simmer and cook on low heat for 1.5 to 2h until sauce thickens. Check from time to time to stir and add more water if needed.
Serve with rice and a variety of sides, for example – Asian pickled cucumber, cooked carrot sticks, avocado.
